Though champagne has been around for centuries, it has only been since the late 1600's it was intentionally bubbly. Prior to then, the winemakers thought the naturally occurring fizz was a serious flaw and tried everything to get rid of it. Champagne was also originally offered only as a sideline promotional product and not thought of as commercially viable. It was used to entice people to purchase their wool, which was the main product of the region (before champagne). Hard to imagine all this now, as champagne today has reached the pinnacle of luxury products and its fabulous fizz is much celebrated around the world!
